
Grizzly’s Custom Cutting has been operating in its current location since 1990, serving Western New York area hunters, trappers and food lovers every cut of meat and specialty meat product imaginable.
Ivan Davis, the owner and operator of Grizzly’s Custom Cutting, has been cutting meat for most of his adult life, working at Wegman’s and processing his own meat before opening Grizzly’s. Ivan is a native of the Portageville area, and currently serves as the Portage Town Supervisor.
Ivan is passionate about hunting, and his hobby is what makes him so good at his chosen career. Good meat packers and processors are a dying breed, he says. Ivan can take your cow, pig, or deer, and process it from the forest or farmyard right to your table in less than a week. Having a professional like Ivan cut your meat, rather than processing it yourself, can actually save you money in the long run. Ivan says that when amateurs process their own deer, they may end up losing prime cuts of meat that are worth a lot of money, whereas Ivan can save everything you need, as well as making sausage, hot dogs, jerky and pepper sticks.
Ivan is a venison connoisseur, and loves eating venison in all its many forms. One of his favorite ways to prepare the meat is to take a venison roast and slow cook it in a Crock Pot with one of Grizzly’s sauces.
